Ingredients:

  • 2 racks of pork ribs (about 3-4 pounds each)
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup barbecue sauce (homemade or store-bought)

Steps:

  1. Preheat the Oven:
    • Preheat your oven to 300°F (150°C). This low temperature will help the ribs become tender and juicy.
  2. Prepare the Ribs:
    • If the ribs have a thin membrane on the back (also called the silver skin), remove it by loosening it with a knife and pulling it off with a paper towel. This step helps the seasonings penetrate the meat better.
    • Pat the ribs dry with paper towels.
  3. Make the Spice Rub:
    • In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, chili powder, ground cumin, ground coriander, salt, and black pepper. Mix well to combine.
  4. Season the Ribs:
    • Rub the spice mixture all over the ribs, coating them evenly on both sides.
  5. Wrap and Marinate (Optional):
    • If you have time, wrap the seasoned ribs in plastic wrap or aluminum foil and let them marinate in the refrigerator for at least 1 hour, or overnight for even more flavor.
  6. Bake the Ribs:
    • Place the seasoned ribs on a baking sheet lined with aluminum foil or parchment paper, bone side down.
    • Cover the ribs tightly with aluminum foil, sealing the edges to trap steam inside.
  7. Slow Cook:
    • Transfer the baking sheet to the preheated oven and bake the ribs for 2.5 to 3 hours, or until the meat is tender and easily pulls away from the bones. This slow cooking method ensures the ribs are juicy and flavorful.
  8. Glaze with Barbecue Sauce:
    • Remove the foil from the ribs and brush them generously with barbecue sauce.
    • Increase the oven temperature to 400°F (200°C) and return the ribs to the oven, uncovered, for an additional 15-20 minutes, or until the sauce is caramelized and sticky.
  9. Rest and Serve:
    • Once cooked, remove the ribs from the oven and let them rest for a few minutes.
    • Cut the ribs into individual portions and serve hot with extra barbecue sauce on the side.
